As expected from the chelating action of citrate and EDTA, calcium was liberated into soluble phase from egg yolk micelles. The liberation of calcium from yolk micelles was accelerated by the decrease of pH value and by the increase of citrate or EDTA concentration. The separation of soluble phase from yolk granules by chelating agents was prevented by the addition of calcium chloride to the mixture.
