| 内容記述 | The clear water soluble phase was separated from the pellet of egg yolk granules when egg yolk was mixed with citrate or EDTA solution, followed by centrifugation at 3,000 rpm for 10 minutes. As expected from the chelating action of citrate and EDTA, calcium was liberated into soluble phase from egg yolk micelles. The liberation of calcium from yolk micelles was accelerated by the decrease of pH value and by the increase of citrate or EDTA concentration. The separation of soluble phase from yolk granules by chelating agents was prevented by the addition of calcium chloride to the mixture. These results suggest that the separation of soluble phase was brought about by the disintegration of yolk micelles structure, caused by the liberation of calcium from yolk micelles. | |||||
