On the basis of this finding, the authors investigated the relation between chemical composition of mucilage and its physicochemical properties. Since Pronase digestion of the Natto mucilage has no effect on the viscosity, it is evident that only carbohydrate moiety contributed to the viscosity. Identification of uronic acid in Natto mucilage were carried out by column chromatography with Dowex-1 and by thin layer chromatography on Replate-50. The only uronic acid found in Natto mucilage was D-galacturonic acid.
