Dazu mussen zuerst die Kenntnisse von der chemischen Struktur der Pektinsubstanz, die noch nicht vollstandig klargemacht ist, dargelegt werden. In dieser Abhandlung werden die Funktionen einzelner Enzyme, welche der Gruppe von pektolytischen Enzyme angehoren, d. h. der Polygalakturonase, der Polymethylgalakuturonase, der Pektinesterase, der Transeliminase, erlautert. Dann wird das Problem der Mazeration, welche in letzter Zeit in bezug auf die Funktionen dieser Enzyme wissenschaftlich in Frage steht, dargestellt, und die Ansichten des Verfassers dazugelegt.
